Recipe: Grilled Oysters
Grilling oysters is the perfect cooking method for introducing novice raw oyster eaters to the wonderful flavors and textures of the oyster. While the grill is heating, shuck your favorite oysters. Be careful not to lose the juice from the shell. Spoon a little of your sauce of choice into each oyster and place directly on the grill (or purchase a special grill rack for oysters). Close the grill cover and cook for 3-5 minutes until the edges curl slightly. Start with these two sauces and then branch out into your own creations.
Chipotle BBQ Sauce
Ingredients:
- 2 tablespoon olive oil
- 1/2 large onion chopped
- 3-4 large cloves of garlic chopped
- 3 chipotle peppers in sauce
- 3 tablespoons molasses
- 3 tablespoons soy sauce
- 1/3 cup of brown sugar
- 1/2 cup of ketchup
Saute onion and garlic in oil until tender. Add remaining ingredients and cook on low heat for 10-15 minutes. Puree using a food processor or immersion blender.
Lemon Dill Sauce
Ingredients:
- 1 cup mayonnaise
- 1/4 cup buttermilk
- 2 tablespoons fresh dill, chopped
- 1 tablespoon minced fresh parsley leaves
- 1 tablespoon grated lemon zest
- 2 teaspoons fresh lemon juice
- 1 small garlic clove, minced
Combine all ingredients in a small bowl.
